Oh man, have I got a feast for you today!? While I will be the first to admit that these meatballs take just a touch of time to assemble, once you get going with them they really aren't that difficult to make. What I will tell you is that every second of the work is worth it, and let's be honest, it really isn't that much, because I can't be too bothered to spend excess time in the kitchen either.

It took me a few tries to get this one just right, but what has happened with this recipe is that I have created the most glorious, cloud-like chicken meatballs - meatballs that I would gladly eat every day!

These are like little pillows. At first taste, I was blown away. FULL of flavor, and while they take effort, I still consider it minimal. I'd make these daily, happily!

Pesto Pasta Salad
I created this salad last summer and it is STILL one of my favorites to make when the weather takes a turn for the HOT! It is filled with so many fantastic Italian flavors that I love, while still being subtle...well as subtle as I can be. I sometimes have a hard time with subtle, lol! I like to pair it with my Italian Marinated Chicken for a quick and easy barbecue dinner with just a little upscale touch.
