Welcome to Sunday Supper, the table is set!
I have a few summer comforts to share with you today. Though I do everything I can to not turn on the oven during the HOT months, which are many in Texas this time of year, these recipes will get you through, and only one of them needs an oven. Even if I just bake mine in what I call my "easy bake oven", lol, which is just my microwave that doubles as a convection oven.
Italian Beef Sandwiches

First up is this Italian Beef. I tend to just let mine cook on the stove all day, but you could absolutely throw it in a crock pot or instant pot on slow-cook mode.

I consider this recipe comfort food, one that I would enjoy any time of year, but even in summer, a little decadence is needed.

And don't be scared by the amount of time this recipe takes, it's almost all inactive time, and very little work is needed. All the enticement I need is the memory of the smells the house is filled with while it cooks!

Sauteed Broccoli
I do my best to offer a balanced plate for supper, and that doesn't mean it has to be boring. With this recipe I aim to up the flavor of this vegetable many like to avoid. Butter, garlic, and lemon help, but the earthy crunch of the pine nuts are my favorite part.

Strawberry Rhubarb Crisp
This is one of the only recipes that I am willing to turn the oven on for in the summer. I find it somewhat difficult to get my hands on good rhubarb in the south, but when I do come across it I buy as much as I can carry and run home and make this crisp!
