Welcome to Sunday Supper, the table is set!
I live in Texas, where the summers get unbearably HOT and the hot days are already starting. When they arrive all I want is a light supper, because I barely want to move, let alone whip up a large dinner. That's when a big salad like this one comes together perfectly!

One of the things I love about this salad is that most of the ingredients can be prepped ahead of time. I spend a little time chopping, slicing, and dicing, and I am set for a couple of dinners or lunches for the week.

I marinate and grill a few chicken breasts, then, when they cool, I slice them up and store everything in individual containers.

Then, as it does in the summer, when dinnertime varies, after pool time or beach visits, I can pull everything out and whip everyone up a dinner salad in a matter of minutes.

Waffle Cone Recipe
The time of year has come when I love to make ice cream with all of the bountiful fruits that come into season throughout the summer. Peach is my favorite, which is linked in the waffle cone recipe too. I started making my own homemade cones last year, and they're a total game changer, beyond delicious and so easy!

Summer Fruit Salad
Simple is the name of the game in summer, and that is just what this salad is. Perfect as a pool side snack, or after whatever adventure takes you out in the heat. Rehydrate with a big bowl of fruit, that holds a tiny little secret that is simple, but makes the flavor of each fruit in the bowl POP with and extra burst of flavor.
