I've got a batch of recipes perfect for highlighting a favorite this time of year, Corned Beef! I cook up a large one, more than I know my family will eat, just so I can have leftovers. As much as I enjoy eating it in the traditional way I think I just might like getting creative with the leftovers more.
Irish Nachos

Hot potatoes, topped with Irish cheddar, corned beef, Russian dressing, and green onions...it just doesn't get much better than this!

While this is a great way to use up any leftover corned beef you might end up with, I just might want to cook one up with the intention of making these only.

This recipe is inspired by a dish I had at a great little Irish pub a friend told me I had to visit in San Antonio when I was there. They were so memorable I had to recreate them at home.

Reuben Egg Rolls
Every time I make these, I can barely keep up with frying them. They fly righ off the plate as fast as I can make them. A crisp crunchy crust filled with tender corned beef, cheese, and a little sour kraut and you have all the inspired flavors of a classic Reuben sandwich wrapped up in a neat little package. And I am all about the sauce when it comes to these, the homeamde Russian dressing for dipping really sends it over the top!

Corned Beef Hash
I love to whip up this hash with even just a small bit of corned beef leftover. The best part is it is all made in one skillet. From quickly boiling the potatoes to tenderize them, to then crisping them up, to then setting the eggs in it, I do it all in one pan, making for a delicious meal and easy clean up. Any time I can keep a meal to one pan that is always a winner. I hope all of these reicpes inspire you to make something great this St. Patrick's season!
