The recipe I am sharing with you today is a favorite of mine to serve for Valentine's Day. I'm a bit of a traditionalist, and even if I am having Valentine's Day dinner with my family, beef and red wine just seem fitting! Classic I know, but for good reason, it's amazing. Short Ribs are also a very economical cut of beef, and with a little time to braise, yet little effort, you get one of the most amazing meals ever. This one takes patience, but not too much effort.

Once you take the time to make these Braised Short Ribs, you'll know why people love them! While they look like they might be a lot of work, they aren't. β I share my instructions for making them the day before you want to eat them, then before serving, remove the fat and warm them up gently until heated through. They take time...to cook...but very little effort for amazing flavor.

Reduce the sauce and they're ready to serve. I like them over my boursin whipped potatoes! Recipe below.

Whipped Potatoes
Serving the Braised Short Ribs over top of these potatoes is like THE MOST ultimate comfort food. Their flavors meld together soooooo good! And if you follow my insturctions for doing the hard work with the short ribs the day before, when it comes time to serve dinner all you have to do is make these potatoes and warm up the short ribs and dinner is served. Simple and easy for ALL!

Coconut Pecan Chocolate Chip Cookies
This cookie is inspired by one that my grandfather loved. He LOVED anything with coconut in it. This is just an updated version of one that has been in my home since I was a kid and it still holds up as amazing! I have swapped the shredded coconut for toasted coconut chips and added in some really nice chocolate, but the heart of the cookie remains the same. Perfect for sharing with someone you love!
