Creamy Mushroom Chicken

This recipe starts with a very simple searing of thin chicken cutlets and ends with being drenched In a rich flavorful mushroom cream sauce.

It is all about building layers of flavor with this one, and what's also great is that it is all done in one pan.

Give the chicken a good sear until golden, then cook the mushrooms in the same pan until tender, make the sauce, and return the chicken to the pan to simmer for a few minutes. Serve it over rice, pasta, or potatoes and dinner is set!

Coconut Tres Leches Cake
I worked up this cake as a nod to a favorite of my familys, but that was alwasy too dry for me. I had the thought, why shouldn't this be a tres leches. I think everyone can agree that a dry cake is a dull cake, and this is as far from that as you can get! A fluffy tender cake is soaked with rich sweetened milks and topped with pillowy whipped cream and crispy toasted coconut...sounds like a dream to me!
