Welcome to Sunday Supper, the table is set!
I have a batch of recipes that are sure to set the stage for a perfect St. Patrick's Day. As I mentioned in my last two emails, this is my favorite food holiday. That has a lot to do with my absolute adoration for Ireland. After visiting for my 30th Birthday a few years back, I am still committed to living there one day! This also invigorates me to search for traditional and authentic recipes, and each recipe below is traditional in one area of the world or another.
Instant Pot Corned Beef and Cabbage

This is a classic Irish American recipe, made even simpler by tossing it into an instant pot, is one that everyone is sure to enjoy!

I love this method because it is pretty much set it and forget it. I start with pressure cooking, then let it slow cook for as long as you can stand it. The longer it cooks the even more tender the corned beef will be.

But the best part is finishing the corned beef in the oven with a beautiful mustard glaze that caramelizes the fat on top and makes this THE best corned beef you've ever had or made!

Irish Colcannon Potatoes
If you want a very traditional side dish to serve this St. Patrick's Day, look no further than these Colcannon potatoes. Fortified with onions and cabbage, mashed potatoes are fried until crispy and golden, in lots of Irish butter. It really doesn't get much more Irish than this. I mean, cabbage, potatoes, and butter...say less! This is also a great recipe to make when you have some leftover mashed potatoes.

Irish Potato Candy
This recipe may be more traditional to Irish Americans, but that doesn't mean it isn't a real winner! While there is a bit of debate on the orign of this one, I can tell you it is ultra simple to make, rich, and delicious. It is also a great reciep to inculde kids in making, because the more wonky, the more potato-like the candies look. Also note, no potatoes were harmed in the making of these, they only look like potatoes!
