Welcome to Sunday Supper, the table is set!
This simple Chicken and Broccoli Rice is easy enough to whip up on a weeknight but delicious enough for Sunday Supper and it's just the meal I know I would love after a long first day of school. It takes me back to my grandmother's kitchen when I was young and learning to cook. She made one from a box, but this is my from-scratch version, not too Chef'ed up, but a million percent nostalgic and tasty.

Maybe one of the best parts of this recipe is that it only takes about 30 minutes to get on the table, and it is made almost exclusively on the stovetop. That's for all my Southerners like me in Texas who live near the gates of hell till December, hahaha! Ok, I'm just kidding, but it is HOT, HOT, HOT, MOST of the year here.

I just pop it under the broiler at the end to crisp up the top, keeping the oven off and the house cool!

Regardless, the flavor will take you right back to Grandma's kitchen after the first bite!

Campfire Fluffernutter Cookies
If you ARE one to turn on the oven in the summer, or if you have a toaster oven (that's my savior in the summer) make these cookies for dessert! They taste just like you've been sitting around the campfire and are bursting with chocolaty goodness.

Zucchini Fritters
If you are still in full-on summer mode, fry up a batch of these Zucchini Fritters as a side to some grilled chicken or pork chops. On a warm summer night, this is a great quick side dish to whip up. And if you have a fruitful garden full of squash, this is a fun recipe to whip up with it.
