Cinco de Mayo is just over a week away, and I have the perfect recipes for celebrating! Growing up with Mexican grandparents on my father's side (I know, look at me; you don't see that), I have many beloved Latin-flavored recipes in my repertoire, most cherished of which is Weta's Mexican Rice.
Carne Asada Beef Fajitas

This recipe for my Carne Asada marinade leaves the rest up to interpretation.

Marinate and grill the beef. I share the specific cut to buy for the best results in the blog post, and then slice or dice it up and make tacos, burritos, nachos, or whatever else you can think up with it!

Last Thoughts...
I know that it probably comes as a little bit of a shock to hear that I have Mexican grandparents, and that story is a little bit complicated, but nonetheless I grew up eating Mexican rice, beans, and tacos A LOT. Visits to "Weta's House" as I affectionately called her, always consisted of sitting at the table with a big pot of her rice, Frijoles, and whichever version of her tacos she whipped up that day.
I do my best to carry on the tradition of feeding the family now and my dad still enjoys her rice when I make it, and I have nailed her recipe now, which is a MAJOR feat, because my dad never at anyone else's rice than hers, and it even took me 15 years post culinary school to get it just right!

Topo Chico Margarita
This is one of THE top recipes on my website, and for good reason! This is the most perfect drink to wash all of the tacos, salsa, guac, chips...you get the idea...down with on Cinco! I love this MARG because it is light and refreshing and not too sweet.

Mexican Flautas
Now I am not going to lie, these flautas are a little bit of work, and I only make them 1-2 times a year, but they are SO GOOD, after first bite I remember they are worth the work. Serve then with guacamole and queso, with a dip in each before each bite, that's how I like it!
